Anyone have a good simple recipe for cornish game hens?

desert wom

I don't want to stuff them with anything.

Answer
I really like these but sometimes if I am running short of time I will glaze the hens with canned cherry pie filling - very good.

Crimson Cherry-Glazed Holiday Hens

Ingredients
4 24-ounce Cornish game hens
2 cloves garlic
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup sliced or chopped shallot
2 tablespoons butter
1 12-ounce jar red cherry preserves (with whole cherries)
1/4 cup red wine vinegar
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves

Directions
Preheat oven to 375 degrees F. Cut one of the cloves of garlic in half and rub the skin of each hen with cut side of garlic clove. Mince remaining garlic clove and set aside. Tie drumsticks to tail. Brush hens with olive oil and sprinkle with the salt and pepper. Place hens, breast side up, on a rack in a shallow roasting pan; twist wing tips under back. Roast, uncovered, for 60 to 75 minutes or until juices run clear and an instant-read thermometer inserted into the thigh of each hen registers 180 degrees F. (The thermometer should not touch bone.)

Meanwhile, in a small saucepan cook shallot and minced garlic in butter over medium heat about 3 minutes or until tender, stirring often. Stir in preserves, vinegar, allspice, and cloves. Bring to boiling; reduce heat. Boil gently, uncovered, about 20 minutes or until desired glazing consistency.

To serve, transfer hens to a serving platter. Spoon glaze over hens. Makes 4 servings.

Simple recipe for cornish game hens- need recipe asap?

Me

I am looking for a very simple recipe to make these, nothing special, I have never cooked them before, and most of the ingredients in the recipes online have so much in them. I don't have any lemons, and every recipe seems to need one, I'm not a fan of lemons to begin with. I thawed them out already, so I need to get them cooked. I have some rosemary, garlic cloves, white wine, olive oil, onion, and various herbs I can use, but every recipe seems to call for something I don't have. I read a post of someone using just salt and pepper, but it didn't say how much. I am not the best in the kitchen, and am trying to impress my husband, so any help would be great! And I was thinking about just omitting the lemon in those recipes, would that work?

Answer
I have cooked cornish game hens dozens of times and you have the perfect amount of ingredients. I never follow any type of receipe because 1) i like to experiment and 2) receipes are always missing SOMETHING.

My suggestion? Cut the cornish hends in half and just sprinkle salt and pepper on it. Just like as if you were salting your own food. Then just glaze it with olive oil (about a teaspoon on each half). I am not a fan or rosemary, but it really depends on if yours is fresh or in a container. Lets assume it's in a container, I would just do a PINCH of it. Rosemary is very strong. I would take one whole onion, chop it up and put it all over the hens. Also, crush 2 cloves of garlic and just sprinkle it on the hens too. I would then put the hens in the pan that your going to cook it in (i prefer oven and if they are thawed out, i would cook them for about an hour at 450.) At the last ten minutes or so, I would broil it just to get that nice golden color.

Those flavors will really go well. But if you want to add more of something or add an extra ingredient, then do so! this is your time to figure out what you like and what works for you.
